Healthy + Fast Breakfast

I like something quick and easy for breakfast especially on the days our oldest goes to school. Trying to find something quick + easy plus healthy is always a struggle. So I decided to make my own breakfast bowls to freeze and then just pop in the microwave. I know exactly what is in them and the best part of all, no preservatives! I kind of just winged them, I didn’t measure anything so take my recipe with a grain of salt please!

Frozen Breakfast Bowls- makes 5

Ingredients:

  • 1 package cubed hash browns
  • 1 bell pepper
  • 1 small white onion
  • 1 package of sausage links or bacon (breakfast meat of your choice)
  • 8 eggs
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • cracked pepper
  • 1 tbsp olive oil

Directions:

Heat olive oil in a skillet. Add in the package of cubed hash browns, chop up your pepper and onion, then add to the skillet. Sauté until all are done. In another skillet, fry up your breakfast meat of choice. In another skillet, scramble your eggs. Once your meat is cooked, cut into bite size pieces. Add all that into a large bowl. Mix everything up. Add in the onion powder, garlic powder, and some pepper too! Place into freezer safe bowls and freeze! When ready to eat, simply microwave until warm and add cheese!
